The trees are tapped towards the end of winter and well before spring the sugaring season is over. Clear raw sap is gathered from the trees and moved to the sugar shack. A hot wood fire is built in the firebox and a continuous stream of sap is fed into the evaporator. As the sap boils lots of steam is released into the air. The sap in the evaporator begins to concentrate, and along with the transforming effect that heat has on sugar, it slowly becomes pure maple syrup.
